BBQ Truffle Pizza

In an attempt to make entertaining simple and delicious, I created this great pizza to serve as an appetizer with drinks.
Ingredients:
- 4 8-inch pre-made pizza crusts (see note)
- 2 cups mascarpone cheese
- 1 cup freshly grated Parmesan cheese
- 1 jar (5.6oz) black truffle spread (La Madia La Tartufata Black Truffle Spread & Topping)
Method:
1. Preheat BBQ to medium.
2. Lay the pizza crusts on your counter and spread the mascarpone cheese evenly to the edges. Top with a thin layer of the truffle spread, about 2 to 3 tablespoons per pizza. Finish with a light sprinkle of Parmesan. At this point you can make as many as needed; simply place a sheet of parchment between each pizza and stack them to save counter space. They can also be placed in a freezer bag this way and frozen for 4 to 6 weeks.
3. When ready to grill, place the pizzas directly on the grill and cook for approximately 4 minutes. Watch carefully, as they cook quickly. Once cooked, remove from the BBQ, cut into wedges, and serve immediately.
- Each pizza serves 2-4 as an appetizer
