Crispy Noodles Stir Fry

Love a little crunch to my noodle.
Ingredients:
- 1 tablespoon grapeseed oil
- 1/2 package of Chinese noodles. (8 ounces) cooked, rinsed, drained and wrapped in a towel
Sauce Ingredients:
- 2 tablespoons Ketjap manis
- 2 tablespoons hoisin sauce
- 1 tablespoon fish sauce
- 2 tablespoons sesame oil
- 2 teaspoons 2.0 chili paste (optional)
- 1 tablespoon honey or agave
- 1/2 cup chopped cashews for garnish
- 1/2 bunch cilantro leaves coarsely chopped for garnish
Method:
1. In a large 12 inch non stick fry pan heat the oil. Unwrap the noodles and using scissors cut the noodles so they are no longer long. Place them in the pan and keep the heat on medium high turning the noodles every 5 minutes. You want them to brown and crisp.
2. While the noodles are browning, mix the sauce ingredients together, set aside. Using tongs, turn the noodles over several times, encouraging browning and crispness. This takes about 10 minutes.
3. Pour the sauce over the noodles and toss to evenly coat them all. Encourage browning, use as a base for stir fry and top with fresh cilantro and chopped cashews.
- Serves 4-6
