We are proud to host Chef Andrei Godoroja, winner of ‘Great Canadian Baking Show’ in store for a hands on pastry class that is not to be missed. Pastry encompasses a wide spectrum of textures and techniques. Some are time-consuming or complex, others are much faster to make, but the results are highly dependent on a few critical minutes of technique. Understanding what needs to be done in those critical minutes will allow students of this class to produce wonderfully flaky pastry that may be the basis of the most impressive and fastest desserts in their repertoire.
- Each student will be coached through making their own galette pastry that they can take home and use the evening of the class, or later that week. Techniques demonstrated will be the classic “fold and turn” used in galette and puff pastry, blind baking for tarts, and making pastry cream. Students will taste and snack on the menu items throughout the class as they are baked to perfection by Andrei himself!
MENU
• Savoury Galette - Leek, Potato and Goat Cheese.
• Sweet Galette - Apple and Cinnamon.
• Puff Pastry - Seasonal Fruits and Fillings.
• Fresh Fruit Tart - Chocolate Ganache, Pastry Cream, Fresh Fruit.

Andrei Godoroja was first asked to teach a pastry course a few years ago, which puzzled Andrei, as he has a degree in Engineering Physics and no training in pastry. However, he went on to be in Season 2 of The Great Canadian Baking Show and, in fact, won.
Andrei believes a background in Physics was good preparation for pastry, but not necessary, and is enthusiastic about showing people how to master something that many people actually fear.
