The Perfect Piece of Fish

Perfect you say?? it is super easy, just don’t over think it. You need a hot fry pan, good seasoning and that is it.
Ingredients:
- 900 - 1 kilo of fresh halibut, salmon or cod
- Your favourite rub
- 3 tablespoons grapeseed oil
- A very good non stick pan, I like Scanpan
Method:
1. Skin the salmon, cut into even portions of 150 grams per portion. Give the fish a rinse and then dry on paper towel.
2. Place your favourite rub in a shallow dish, pat each side of the fish in the dish to coat the fish on both sides.
3. Heat the oil in the pan until hot. Place the fish in the pan uncovered. Let the fish cook for about 4-5 minutes. Do not flip. Once the fish is cooked through....you can determine this by looking at the sides of the fish to see the colour or by using your finger for the pressure test.
4. Place the pasta in your serving dish, grate Parmesan over, then top with the seared fish and give a good spray of white balsamic and a sprinkle of fresh cilantro and ground pepper to finish.
