A JOURNEY THROUGH PERSIAN FLAVOURS | 6 PM - 9 PM
Join us for an immersive cooking class celebrating the rich flavours, aromatic spices, and time-honoured traditions of Persian cuisine. In this hands-on experience, you’ll prepare four beloved dishes from scratch while discovering the beautiful balance of sweet, savoury, tangy, and fragrant flavours that makes Persian cooking so distinctive.
Under the guidance of Chef Behnaz, you’ll learn traditional techniques and explore the ingredients at the heart of Persian home cooking. From creating a flavourful eggplant spread and fragrant saffron rice with the world-famous crispy Tahdig, to preparing a rich tomato-based chicken dish and a delicate Persian sweet, each recipe offers a delicious introduction to the warmth and hospitality of Persian cuisine.
Along the way, Chef Behnaz will share tips and techniques for working with signature Persian ingredients, building layers of flavour, and achieving authentic results at home.
By the end of the class, you’ll have prepared a delicious Persian feast and gained new recipes, skills, and inspiration to recreate these dishes for family and friends.

• Kashk o Bademjoon:
Roasted Eggplant Spread with Kashk, Caramelized Onion, Garlic and Dried Mint.
• Zereshk Polo:
Fragrant Saffron Basmati Rice with Tart Barberries, Pistachios and Almonds.
• Persian Chicken:
Tender Chicken Braised in a Rich Tomato, Saffron and Persian-Spiced Sauce.
• Persian Halva:
Traditional Saffron and Rosewater Halva with Pistachios.

Chef Behnaz is the owner and cake artist behind Joconde Cakes, an award-winning boutique cake studio in Vancouver specializing in luxury wedding and celebration cakes. A recipient of the BC Wedding Awards' Best Wedding Cake Design, her work has also been recognized as a finalist in multiple years and featured in publications including WedLuxe, Style Me Pretty, Weddingbells, and Real Weddings.
Behnaz holds a Bachelor's degree in Criminology with a background in Law, before pursuing her passion for the culinary arts. She completed both the Culinary Arts and Baking & Pastry Arts programs at Vancouver Community College (VCC) and went on to gain valuable experience working in several of Vancouver's top-rated restaurants and catering companies.
Dedicated to continually refining her craft, Behnaz has trained with internationally renowned wedding cake designers, including Ron Ben-Israel in New York and Lori Hutchinson in San Francisco, where she advanced her skills in luxury cake design, sugar artistry, and contemporary decorating techniques.
With over a decade of experience creating custom cakes, Behnaz is passionate about sharing her knowledge with others. Her workshops combine professional techniques with an approachable, hands-on teaching style, making them enjoyable for decorators of all experience levels. Whether students are beginners or experienced home bakers, they leave with practical skills, creative inspiration, and the confidence to recreate beautiful cake designs long after the class is over.
