Join us for a hands-on mixology class where you’ll learn to craft creative cocktails like a pro during this engaging and interactive session.

From the moment you arrive, settle in at your station and savour a beautifully curated selection of charcuterie while expert bartender Nicolo Tognon guides you through the darker side of the bar.

Working with aged spirits—from brandy and rum to the diverse world of whisky—you’ll shake, stir, and sip your way through four delicious cocktails, each featuring distinctive flavour profiles and pairings designed to complement the evening’s food and spirits.

Along the way, you’ll explore the world of aged spirits and learn professional techniques to elevate your home bartending skills.

To complete the experience, each participant will create a handmade cocktail syrup to take home.

Belle Époque:
A sparkling journey through golden-hour elegance—lush peach, bright lemon,
almond-kissed brandy, and a refreshing finish that lingers beautifully.

The Rum Diary:
A tropical fever dream of spiced rum, ripe pineapple, fiery ginger,
and lime—frothy, vibrant, and unapologetically colourful.

Golden Fleece:
A smoky, seductive exploration of raisin-infused Scotch, sherry, honey,
and bitters—rich, mysterious, and quietly intense.

Classic Vieux Carré:
A timeless New Orleans classic where brandy, rye, sweet vermouth,
and herbal bitters converge in a deep, aromatic embrace.

“Nicolo is an hospitality veteran born and raised in North-Eastern Italy. His journey in the culinary world started at the age of 14 when he got enrolled in hospitality school to pursue a passion made of memories of travels throughout the country as well as of spirit of conviviality from numerous family and friends gatherings.

In 2010 he left Italy and moved to London, UK where he worked at different fine dining establishments to deepen his professional skills, he then flew to Australia where he started to explore bartending and mixology at a prominent steakhouse in the city of Sydney. In 2015 he had a chance to relocate to Italy to spend a year working in the city of Venice at the prominent Gran Caffe Quadri in St.Mark’s Square.

Nicolo moved to Vancouver in 2016 where he joined Ancora restaurant on False Creek as a mixologist and crafted numerous cocktails inspired by the “Nikkei” fusion of Peruvian and Japanese flavours; in 2020 he joined Tutto Restaurant & Bar in Yaletown as the opening Bar Manager, where he was given the opportunity to create his very own Italian inspired bar program from scratch and to fully develop the brand new lounge concept and setting.

Nico took part at various mixology competitions throughout the years and is now working in the beverage retail industry, he holds a WSET 2 certification in Wine and Spirits as well as his Sommelier title with the Italian Sommelier Association. His future goal and aspiration is to become a Wine and Spirits educator!”
