Super Bowl Snack Board

This is an epic board that will surely gain a lot of attention on game day. It’s a few components that feature new wing dusts from Kosmos, just in time for Super Bowl Sunday! These are flavour packed seasoning powders that are super versatile. In fact, we used three flavours in five different ways!

 

Ingredients: Fried Buffalo Cauliflower Bites

  • 2 tbsp cornstarch
  • 2 tbsp rice flour
  • 1 cup all purpose flour
  • 2 tsp baking powder
  • 1 cauliflower head
  • 1 ¼ cup ice cold water
  • 4 cups of neutral frying oil

Ingredients: Nashville Hot Chicken Wings

  • 3lbs split chicken wings
  • 2 tbsp baking powder
  • 2 tbsp Nashville hot wing dust

Ingredients: Nashville Hot Sauce

  • ¼ cup of unsalted melted butter
  • 1 tbsp Nashville hot wing dust
  • 3 tbsp Mike’s hot honey
  • 2 tbsp vinegar

Ingredients: Garlic Parmesan Fries

  • 500G bag of frozen French fries
  • 1 tbsp garlic Parmesan wing dust
  • ¼ cup grated Parmesan

Ingredients: Garlic Parmesan Aioli

  • ½ cup of mayo
  • 1 tbsp garlic Parmesan wing dust
  • 2 tsp Dijon mustard
  • 2 tbsp grated Parmesan
  • 1 clove of grated garlic
  • Zest of half a lemon
  • Juice of half a lemon
  • 1 tsp sugar
  • 1-2 tbsp water
  • Chopped chives

Method:

1. Garlic Parmesan Aioli: In a small bowl, combine all the ingredients and mix until well combined, add about a tablespoon of water to thin out the sauce if you prefer.

2. Fried Buffalo Cauliflower Bites: In a shallow medium pot, heat fry oil to about 350°F. Cut the cauliflower into small florets. In a medium sized bowl add the cornstarch, rice flour, all-purpose flour, wing dust, baking powder, and mix with ice cold water until combined. Once the oil has heated, coat the cauliflower in the batter, shake off excess batter, and fry until crispy and batter is cooked through. Repeat with remaining cauliflower and do not overcrowd the pot. Transfer cooked cauliflower on a baking sheet with a non-stick wire rack to cool.

3. Crispy Baked Chicken Wings: Preheat oven to 425°F. Dry chicken wings by blotting them with paper towels to remove excess moisture. In a large bowl, add the baking powder and mix until the wings are lightly coated. Place on a baking sheet with a non-stick wire rack to promote even air circulation. Bake for about 45 minutes – 1 hour, turning every 20 minutes, until wings are crispy and browned. Separate half of the wings and coat them in 1.5 tbsp of the wing dust, for the other half of the wings, add 1 tbsp of the wing dust and toss in the Nashville sauce to combine. Garnish with green onions.

4. Garlic Parmesan Fries: Using the same oil from the buffalo bites at the same temperature, drop the fries in small batches to avoid the oil cooling down, fry until crispy and golden brown. Transfer to a bowl while the fries are still hot and toss in with garlic Parmesan wing dust. Garnish with grated Parmesan.

5. Board: Assemble all components together into small bundles, garnish with veggie sticks, condiments, and serve immediately.
