Almond Pears Cookies

The Almond Pears are cute little almond cookies, shaped into pears. They’re not too sweet and perfect for gluten free diets.
Ingredients:
- 3 cups finely ground almonds
- 1/2 cup sifted icing sugar
- 1 tsp grated lemon zest
- 2 large free range egg whites
- 1 drop Nielsen-Massey almond extract
- 28 whole cloves
- Icing sugar for final dusting
Method:
1. Preheat oven to 325F. In a large bowl the almonds and icing sugar together, stir in the zest.
2. Lightly beat the egg whites, add the extract, and stir into the almond mixture. Continue stirring until the entire mixture is moistened.
3. Dampen your hands with water, spoon a large tablespoon of dough into your hands and shape into small pears. Transfer to a parchment lined cookie sheet.
4. Insert a clove into the top of each to resemble a stem. Bake at 325F for about 15-20 minutes. Remove and cool. Lightly dust with icing sugar.
