Apple, Arugula & Pomegranate Salad

I created this salad for Simi (Simi Sara from CKNW), who loves Honey Crisp Apples. The combination of sweet and crisp combined with the peppery arugula is a delightful flavour marriage. Pomegranate seeds and a good crumble of goat cheese makes this salad perfect.
Ingredients:
- 1 honey crisp apple cored and sliced thin
- 4 cups fresh arugula, long stems removed
- 1 cup fresh pomegranate seeds
- 1 cup crumbled goat cheese
Dressing Ingredients:
- 1 small shallot, diced fine
- 1 teaspoon Dijon mustard
- 3 tablespoons white balsamic vinegar
- ½ cup really good extra virgin olive oil
- fleur de sel to taste
- ground fresh pepper to taste
Method:
1. Mix the shallot & mustard in a small bowl, add the vinegar and whisk in the oil. Adjust the seasoning with fleur de sel and pepper. Set aside until serving time.
2. To serve, mix the apple slices and arugula together, divide equally among 4 plates.
3. Sprinkle the pomegranate seeds over top and garnish with the crumbled goat cheese.
4. Drizzle the reserved dressing over and enjoy.
