Florentines Biscuits

The delicious Florentines have been revamped with sundried chopped fruits for more texture. The choice of fruit is up to you – sour cherries, blueberries, cranberries, or apricots would be excellent.
Ingredients:
- 40g butter
- 3 tbsp unbleached flour
- 1/3 cup brown sugar
- ½ cup flaked almonds or hazelnuts
- ½ cup high quality dark chocolate, at least 65%, melted
- 1/4 cup sundried fruits of choice (cherries, blueberries, cranberries, apricots, etc.), finely chopped
Method:
1. Preheat oven to 350F. Cream the butter, flour, and brown sugar together. Stir in the chopped mixed fruit and nuts. Mix well. Drop ½ teaspoon of batter onto a parchment lined cookie sheet and ensure that you allow plenty of space between each cookie as they expand. Dip your finger in a bowl of water and gently press down the cookie before placing in the oven.
2. Bake at 350F for 5 minutes or until golden brown. Remove from the oven and while the cookies are hot, take a small spatula and gently push the edges towards the centre of the cookie, doing your best to make circle as even as possible. Let cool completely.
3. Once completely cooled, gently lift each cookie, and spread the flat side with melted chocolate. Once the chocolate is almost set, take a fork, and gently run a swirl through the chocolate. Allow the chocolate set and serve.
