Marzipan Cookies

The miracle of these little almond gems is one thing - marzipan!  The perfect balance of almonds, sugar and water.  What could be easier than 5 ingredients simply mixed and rolled into a cookie.  Almond lovers rejoice!


Ingredients:

  • 150 grams marzipan
  • 1/3 cup granulated sugar
  • 4 tablespoons flour
  • 1 large egg white
  • Small bowl of water for dipping your hands
  • 1/2 cup sliced almonds for rolling
  • Icing sugar for dusting

Method:

1. Place the marzipan, flour, granulated sugar, and egg white in the bowl of a food processor and mix for about 2 minutes or until the ingredients are combined. Cover and chill for 2 hours.
2. Line a cookie sheet with parchment and preheat the oven to 350F.
3. The dough will be very sticky. Take a portion of dough, about a 1 inch ball, wet your hands and roll into a smooth ball. Dip into the sliced almonds and place onto the prepared cookie sheet.
4. Press down lightly to make a cookie. Repeat with remaining dough. Bake at 350F until the cookies  are just light and golden, about 14 minutes. Do not let the cookies darken, it changes the flavour of the almond.
5. Remove, let cool and dust with icing sugar.
