Pear Crisps with Whipped Stilton & Truffle Honey

This easy to prepare appy is light and full of flavour. You can use any blue cheese of choice, I like Italian Gorgonzola because of its creaminess.

Ingredients:

  • 2 medium Bosc or Anjou pears, slightly under ripe
  • 6 ounces of Stilton or Italian Gorgonzola cheese, room temperature
  • 2 tablespoons port wine or sherry
  • truffle honey
  • chopped and toasted walnuts

Method:

1. Cut about 1/2 inch off the pointed end of the pear, then thinly slice the pear and lay the slices on a parchement lined cookie sheet.
2. Bake at 295F for about 45 minutes or just until the slices are barely golden and have lost their moisture.
3. Remove from the oven and cool.
4. Place the cheese and port in a bowl and whip together. You can either spoon a small amount onto the pear crisp or place the mixture into a piping bag fitted with a plain nozzle and pipe the mixture onto the pear.
5. Top with a few leaves of te lemon thyme, and a little drizzle of truffle honey and walnuts
