Roasted Garlic & Fresh Dill Dressing

This is terrific over butter lettuce leaves, the classic wedge or a grilled piece of wild Pacific Salmon.
Ingredients:
- 1 head of garlic
- 1 teaspoon olive oil
- 1 cup buttermilk
- ½ cup mayonnaise
- Pinch of sea salt
- Fresh ground pepper to taste
- 3 tablespoons chopped fresh dill
Method:
1. Cut ¼ inch off the top of the garlic, rub with the olive oil and loosely wrap in foil. Place in a preheated 325F oven for 45 minutes or until soft & golden brown. Remove and cool.
2. Whisk together the buttermilk, mayo, salt, pepper & dill. Squeeze the roasted garlic onto a saucer and mash with a fork until smooth. Whisk into the dressing adjust the seasoning and chill for at least 2 hours before serving.
Makes 1 ½ cups
