Smoked Salmon Rolls

It seems that smoked salmon is one of the most common options for most cocktail parties. Laid on a platter, with capers, onions and a cracker or 2 is so pedestrian and boring. Here is an option that will bring the salmon slices to a new life.

Ingredients:

  • 250 grams sliced smoked salmon
  • 1/2 cup wasabi mayonnaise
  • 1 ripe avocado, mashed with a squeeze of lemon
  • 3 mini Lebanese (Japanese) cucumbers julienned
  • 1 cup fresh pea shoots
  • Fresh cilantro and mint leaves
  • Black sesame seeds for garnish

Method:

1. Lay the slices of salmon on your work surface.  Smear with a thin spread of wasabi mayo, then a  layer of avocado.
2. At one end of the slice mound about 4 sticks of the cucumber topped by some pea shoots, a bit of mint and a few cilantro leaves.
3. Roll up and sprinkle with the sesame seeds to garnish.
