Brined and Grilled Prawns

      • 1 cup Kosher salt
      • 1 cup boiling water
      • 8 cups cold water
      • 1 pound prawns (26-30 size) shell on

Ingredients for Paste:

      • 2 garlic cloves minced
      • 2 Tbsp. smoked paprika
      • 3 Tbsp olive oil
      • juice from ½ fresh lemon
      • sea salt to taste
      • fresh ground pepper to taste


1. Mix the paste ingredients in a small bowl.
2. Drain and rinse the prawns.
3. Blot dry and rub with the paste.
4. BBQ or pan fry on high heat until bright pink.

Serves 4-6
